Inventory the mailboxes first

Before moving anything, identify every mailbox, alias, forwarding address and device that depends on the existing service.

Mailbox data can be prepared before the public mail-routing change. This reduces the amount of work that has to happen during the final switch.

A migration is not finished until the people using the mailboxes can send and receive normally from their usual devices.
